“Special Occasion Cake”

~Trim Healthy Mama Friendly~

Just in time for Mother’s Day with all the pleasure and NONE of the guilt, you can enjoy this incredible Special Occasion Chocolate Cake and feel just as special as you really are on this Mother’s Day! Enjoy this Delectable Treat from our favorite Trim Healthy Mama’s!

Special Occasion Cake, Trim Healthy Mama, Loosing Weight, Mother's Day Cake

Special Occasion Cake

 

Ingredients:

  • store-bought coconut flour
  • unsweetened cocoa powder
  • golden flax meal• baking powder
  • baking soda
  • sweetener
  • eggs
  • coconut oil
  • coconut milk
  • vanilla

Dry Directions:

  1. Place 1 cup store-bought coconut flour into mixing bowl.
  2. Add ½ cup ground golden flax, ½ cup unsweetened cocoa powder, 2 tsp. baking powder, and 2 tsp. baking soda.
  3. Add 3-4 Tbs. Truvia and ¼ tsp. Nunaturals. This is a large layered cake so you need quite a bit of sweetness.
  4. Rub all ingredients between palms of your hands to remove lumps and combine well into a nice fine meal.

Wet Directions:

  1. Crack 10 eggs into blender.
  2. Add ½ cup coconut oil.
  3. Add 1 ½ cans full-fat coconut milk.
  4. Add generous dash of vanilla.
  5. Blend well and pour contents of blender into dry ingredients.
  6. Combine ingredients well and let sit for 5 minutes while greasing two cake or bread tins.
  7. Divide mixture evenly between two cake tins and bake at 350 for 1 hour.
  8. Cool cakes before trying to remove them from tins.

Icing for Cake – (superfood option)

Ingredients:

  • coconut milk
  • eggs
  • vanilla
  • cocoa powder
  • sweetener
  • coconut oil

Directions:

  1. Pour 1 can full-fat coconut milk into blender.
  2. Add 2 omega-3 eggs.
  3. Add 1Tbs. pure vanilla.
  4. Add ½ cup cocoa powder.
  5. Add enough sweetener to taste. If using only Nunaturals, use at least ⅛ tsp. If you have a real sweet tooth, you will need ¼ tsp. If using only Truvia, you’ll need 8-10 tsp. You can also use a combination of the two sweeteners.
  6. Add ¾ cup virgin coconut oil (use Louanna cooking coconut oil if budget is an issue, but since we’re going “all out” in this recipe, virgin is best).
  7. Blend well and transfer to refrigerator for mix to chill and thicken as hard as butter.

 

Icing for Cake – (quick version)

Ingredients:

  • unsalted butter
  • unsweetened baker’s chocolate or cocoa powder
  • sweetener
  • hot water

Directions:

  1. Put 1 ½ quarters softened unsalted butter into a mixing bowl.
  2. Add 1oz. melted unsweetened chocolate square. Use 2 unsweetened chocolate squares if you like a darker chocolate taste, or the squares may be substituted with ¼ cup unsweetened cocoa powder.
  3. Grind 10 tsp. Truvia in coffee grinder and add to mixing bowl, or use ¼ tsp Nunaturals
  4. Beat mixture with electric beater for a few minutes.
  5. Add a little hot water to thin consistency to more spreadable icing.
  6. Taste for sweetness and add more ground Truvia if desired.

Raspberry Lemon Glaze–

Ingredients:

  • raspberries
  • lemon juice
  • sweetener

Directions:

  1. Put one package of fresh or frozen raspberries in blender
  2. Add 4 tablespoons of lemon juice
  3. 6 teaspoons of Truvia ground in coffee grinder or 1/4  teaspoon of Nunaturals

    Does the coconut flour taste like coconut? No one in my family likes even a hint of a taste of coconut. So could we use almond flour instead? And almond milk?

      Coconut flour acts very differently from almond flour in recipes, so I don’t think that would work well. I don’t think it tastes like coconut personally, but I LOVE coconut so I might not be the best person to ask 🙂

    This looks wonderful. I’m so happy to see the recipe lined out like this and a photo. I’m kindof ‘strange’ about recipes. I want to see them before I make them, that way I know what its suppose to look like. Yours looks so good. I will definitely make this cake for my diabetic mom for her birthday. I have read the recipe in the book a couple of times, but haven’t wanted to try it until now. Thank you!

    This looks great. Today is day 2 thm for me. My family is not doing thm. My little boy is turning 3 saturday. He wants a chocolate cake. I am planning on making this. I am nervous. I don’t have nunaturals hopefully I can get it. What does it do? Also should I make it a day ahead of time or same day? Ok one last question. I don’t have a reputable source of eggs. There is a place down the road I can get some. Are the eggs in the frosting ok to eat raw? Thanks a million!

      Hi Ashley! I’ve never heard of anyone having an issue with this recipe and the raw eggs but you’ve gotta go with your mama gut instinct. I used to make a raw egg yolk pudding and never had issues with it.
