SIN-amon Muffins
The Laundry Moms are so excited to share this yummy Cinnamon Muffin recipe from our friends over at Trim Healthy Mama! You would think by indulging in these muffins you might be committing a sin (they are so delectable) but just the opposite is true…they are ACTUALLY GOOD FOR YOU! Cinnamon Muffin In A Mug
Ingredients:
*Crack 1 egg into a coffee mug and whisk it well with a fork
*Add 3 Tbs. Golden Flax meal or 2 Tbs. Golden Flax Meal and 1 Tbs. Almond flour
*Add 1 scant Tbs. cinnamon
*Add 1 flat Tbs. coconut oil (or butter)
*Add 1 Tbs. water (this is optional but makes ingredients easier to stir and a less dry muffin)
*Add 3-4 tsp. of Truvia or 3-6 shakes of Pure Stevia extract
*Add ½ tsp. baking powder (I use aluminum free)
*Add 3 Tbs. Golden Flax meal or 2 Tbs. Golden Flax Meal and 1 Tbs. Almond flour
*Add 1 scant Tbs. cinnamon
*Add 1 flat Tbs. coconut oil (or butter)
*Add 1 Tbs. water (this is optional but makes ingredients easier to stir and a less dry muffin)
*Add 3-4 tsp. of Truvia or 3-6 shakes of Pure Stevia extract
*Add ½ tsp. baking powder (I use aluminum free)
Directions:
*Stir vigorously until very well combined then microwave for 1 minute or bake at 350 in a ramekin for 10-15 minutes or until done.
- Cream Cheese Frosting
*Put 1 flat Tbs. cream cheese into a bowl (I use 1/3 less fat Philadelphia cream cheese)
*Add 2 heaping Tbs. of Plain Greek yogurt
*Add ½-3/4 tsp. vanilla or a few squeezes of fresh lemon juice or concentrate (fresh tastes best)
*Mix well with a fork
*Grind 3 tsp. of Truvia in a coffee grinder and add or shake in 3-6 shakes of pure stevia extract. If using only pure extract, stir and taste the icing after 2-3 shakes for your desired sweetness then add more, tasting as you go.
*Keep stirring with your fork until icing is smooth, cut your muffin in half and top each half generously
