We are all in the Christmas spirit here at TheLaundryMoms.com and wanted to share some of that spirit with you and your family with this Scrumptious Spice Cake that will become a family favorite!

Scrumptious Spice Cake
Ingredients:
- 1 1/2 cups almond flour/meal
- 1/2 cup golden flax meal
- 1 TBSP ground cinnamon
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 2 tsp ground nutmeg
- 2 tsp ground cloves
- 1 tsp salt
- 2 eggs, separated
- 1/2 tsp stevia (or to taste), or THM sweetener of choice
- 1/2 cup almond milk
- 1/4 cup butter, melted
- 1/2 cup applesauce – if at S Helper stage. If not, 1/2 cup butter (NOT coconut oil)
- 1/4 tsp cream of tartar
- Optional: 1 diced apple or 1/2 cup raisins (if at Crossover stage)
Directions:
- Preheat the oven to 350.
- Grease a cake pan and set aside.
- In a large bowl, combine the almond meal, golden flax meal, cinnamon, baking powder, baking soda, nutmeg, cloves, and salt.
- Set aside.
- In a medium bowl, whisk together the egg yolks, stevia (or sweetener of choice), almond milk, melted coconut oil and applesauce or butter.
- In another large bowl, with an electric mixer on high speed, beat the eggs whites and cream of tartar until still peaks form.
- Gently fold the beaten egg whites into the egg yolk mixture until fully combined.
- Add egg mixture to flour mixture and combine well. Add diced apples/raisins if using.
- Pour batter into cake pan.
- Bake for 20-25 minutes on 350.
- Cool in the pan on a rack for 5 minutes.
- Remove from the pan and cool completely on the rack.
- Optional-Top with Homemade whipping cream or FF Ready Whip 🙂

What is the reason for using “butter (NOT coconut oil)”?
In the instructions you mention mixing the coconut oil plus the applesauce or butter. I’m assuming that was a mistake, and was supposed to be butter, since in the ingredients you only have butter listed.
Hi Victoria! I thought I had already mentioned the reason why to not use coconut oil in place of butter, but I guess it didn’t successfully post. Yes, I did make a mistake in the instructions. ( Sorry about that! Good job for noticing! 😉 ) When I first made the recipe I used coconut oil, because we didn’t have any butter on hand. YUCK! Coconut oil provides a flaky, coconut-y, and bread-like cake….Not very appetizing. This cake needs something that only butter seems to provide. 🙂 So yes, only use butter in this recipe. Enjoy!
I made this but is the amount of sweetener correct? I was also confused about the butter and coconut oil and applesauce.
I ate one piece with whipping cream.
I think our horse will enjoy the treat.

The sweetener amount is correct. The cake only has a hint of sweetness..the kind of cake you enjoy with a cup of coffee and whipped cream. It really depends on what stevia you buy. We buy the brands Omica and Pure Organics…very potent. It doesn’t matter what you stevia you are purchasing, as long as you are not buying stevia in the raw. Stevia in the Raw uses a filler called maltodextrin that raises your blood sugar like crazy. Just watch for fillers. 🙂
Scrumptious! Delicious! My entire family enjoyed this cake yesterday. I altered it slightly for my daughter who has an egg allergy – switching out the eggs for two flax eggs and omitting the egg white step all together. I also doubled the stevia, because my family has a sweet tooth. I applaud your recipe – it was a home run!

You could try 2 cups of baking blend and go from there. We’ve never done it that way so I’m not exactly sure.
