Rainbow Fruit Skewers
We snuggled into our over-sized chair for story time with one of our all time favorite books, Timothy Whale’s Rainbow, an adventure of a whale that is fascinated by the beautiful rainbow and the spectacular colors that appear in the sky! Timothy’s grandpa takes him back in time to when the first rainbow was ever seen, during the classic Bible story with Noah. Often times with stories it’s fun to enjoy a yummy snack during teachable moments to help the kids remember the lessons that ultimately will shape their character.
This week enjoy a rainbow colored healthy snack idea. It’s a nice change from the everyday go to snacks from the cupboard. Have fun dipping the fruit in the delicious homemade fruit dip!
Rainbow Fruit Skewers
to make 12 skewers
Ingredients:
12 raspberries or strawberries
6 orange segments (from 1 large orange), cut in half
12 1” chunks of pineapple
2 kiwis, peeled and cut into 12 1” chunks
24 large blueberries
12 red seedless grapes
Method:
1. Lay out 12 bamboo skewers.
2. Prepare your fruit.
3. First start by Slide a raspberry or strawberry to the top of the stick.
4. Next add chunks of orange, pineapple, kiwi, 2 blueberries, and a grape.
5. Repeat for each skewer.
Enjoy the fruit skewers along with this fruit dip below:
Fruit Dip
Ingredients:
1 – 8 oz of Greek Yogurt
2 Tablespoons of Honey or Agave (you can use Stevia as well)
Method:
1. Mix greek yogurt and the honey or agave in a small bowl. Combine ingredients well.
2. Serve with along the fruit skewers-
Be sure that little children and toddlers are supervised because the end of the skewer can be pointy and sharp. For toddlers I would recommend using dull toothpicks and placing about 3 pieces of bite sized fruit on each toothpick.
***NOTE: For Trim Healthy Mama’s use a plan approved sweetener with the greek yogurt instead of honey. Also note that it should be 0% Greek Yogurt to make this a THM E recipe!
