Grandma Millie’s Beef Stew

There’s just something about a New Year, a fresh start, and cleaning up and cleaning out the old, in order to begin with a clean slate! Plus, nobody’s got time to spend hours in the kitchen so this week we’ve got a bonus recipe with our “One-Pot Wonder” dish that will please the whole family and simplify things in the kitchen so you can focus on those goals you’ve created for 2021!

Grandma Millie’s Beef Stew

Ingredients:

  • 2.5-3.5 lbs. stew meat
  • 3 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 onion chopped
  • 5 cups beef broth
  • 2 cans stewed tomatoes
  • 2 tablespoons tomato paste
  • 2 cups chopped carrots (eat sparingly for THM, Paleo & Keto)
  • 4 cups cubed potatoes (optional for the family but not THM or Keto friendly)
  • 1 bay leaf
  • 1 teaspoon thyme
  • 4 cloves garlic, minced
  • 1 Tablespoon Worcestershire sauce
  • 2 cubes beef bouillon (look for one containing no MSG)
  • 2 cups frozen peas
  • 1 cup frozen green beans

 

Instructions:

  1. Add all ingredients except peas and green beans to crockpot and stir (for added flavor roast carrots and potatoes with olive oil, salt, pepper, and rosemary in the oven before adding to the crockpot at the end with frozen veggies)
  2. Cook on low for 6-8 hours
  3. Remove bay leaf.
  4. Add peas and green beans to stew 10 minutes before serving for firmer veggies or for less firm add 20-30 minutes before serving.
  5. Enjoy!
