Tex-Mex Skillet
~Trim Healthy Mama, Keto & Paleo Friendly~
This delish family-friendly recipe is a nice change from soups and chili during the winter months! Quick and easy and it smells fabulous while simmering on the stove-top! Heads up… there probably won’t be any leftovers!

Ingredients:
- 2 cups leftover turkey, shredded (or ground turkey)
- 1 bell pepper, chopped
- 1 cup grape tomatoes, halved
- 1 onion, diced
- 2 garlic cloves, minced
- 4 green onions, sliced
- 1 avocado, diced
- 1 1/2 cups enchilada sauce (we love Siete)
- 1/2 cup chicken stock
- 2 tbsp. chili powder
- 2 tsp. smoked paprika
- 1 tsp. cumin
- Pickled jalapeños, to taste, for garnishing
- Sea salt and freshly ground black pepper
Directions:
- Melt some cooking fat in a skillet over medium-high heat.
- Add the onion and garlic and cook until soft.
- Stir in the bell pepper, tomatoes, and half the green onions.
- Sprinkle with chili powder, paprika, cumin, sea salt, and black pepper. Give everything a good stir and cook 3 to 4 minutes.
- Add the turkey, enchilada sauce, and chicken stock. Bring to a boil, and lower heat to a simmer.
- Cover and simmer 20 to 25 minutes.
- Serve with remaining green onions, avocado, and pickled jalapeños on top.
- Enjoy!
