Grab-n-Go Mini Frittatas

This perfect on-the-go breakfast or when you need a quick protein snack is perfect, especially with going back to school! Go ahead and make them ahead of time and freeze them for a simple solution to those busy mornings!

- 6 large eggs
- ¼ cup coconut milk
- 1 tbsp olive oil
- ½ tsp sea salt
- ¼ tsp pepper
- ½ tsp onion powder
- ¼ tsp garlic powder
- ¼ cup diced bell pepper
- ¼ cup chopped baby spinach
- 1-2 slices of bacon cooked and chopped
Fill the liner of your Instant Pot with 1 cup of water, and set the Trivet at the bottom.
Butter four 8oz wide mouth mason jars or ramekins.
Whisk the eggs, milk, oil, and seasonings until frothy.
Whisk in the veggies and bacon, and then pour equally -egg mixture into the mason jars or ramekins.
Set the mason jars on the trivet in the Instant Pot, close the lid, seal the valve, and press “Manual.” Keep the pressure at “High,” and bring the time down to 5 minutes.
When timer beeps @ 5 minutes release pressure valve and open lid.
Add a lid for on-the-go, slide them out for eating immediately, or freezer storage.
*(To freeze the egg frittatas, slide the egg out and let it cool completely before putting them into freezer bags.)
