Mini Strawberry Cheesecakes

“Mini Strawberry Cheesecakes”

~Trim Healthy Mama Friendly~

 

Looking for a new breakfast option…LOL! Well check out this delicious no bake cheesecake that will satisfy your craving for a little sweet delight morning, noon or night! The best part is it’s an ‘S’ dessert that will keep those pounds falling off even with a little indulgence in this scrumptious treat the whole family will enjoy!

Mini Strawberry Cheesecakes

Ingredients:

  • 1 8 oz. bar of cream cheese
  • 1 and 1/4 cups whipping cream
  • 1/8 cup THM Sweet Blend
  • Vanilla (about a capful)

Directions for Filling:

  • Mix cream cheese, THM Sweet Blend and vanilla until well combined.
  • In a separate bowl whip the cream.
  • Add whipping cream to cream cheese mixture and combine.
  • Refrigerate.

 

 

CRUST-Ingredients:

  • 1/2 cup almond flour
  • 1/4 cup pecan pieces
  • Cinnamon
  • 4.5 tbsp. butter
  • Salt
  • 2 tsp. THM Sweet Blend

 

Directions:

 

  • Slightly grease muffin tins with a small amount of coconut oil
  • Combine crust mixture to form a small ball and press into medium size muffin tins
  • Bake at 350* until browned
  • Cool
  • Fill muffin tins with cheesecake filling and chill
  • Carefully lift Mini-Cheesecakes out of tins when ready to serve
  • If desired top with sliced strawberries soaked overnight in Trim Healthy Mama Sweetener.

      Rebecca…If it’s still not working…the only thing I can think of is… it might not work on a mobile phone?

      Caroline…the original recipe is for a pie pan so the number of mini cheesecakes will depend on the size of your “muffin” openings. 🙂

    Hey moms! I have almond flour problems. It makes me gag 🙁 How about coconut flour? Can I sub or would I have to add more moisture?

      I would add a bit more moisture and let it sit about 10 minutes…just might have to play with it a bit…maybe do a little of both? 🙂

    This looks so yummy! but your lead in info says “this delicious no bake cheesecake” then the recipe says to bake!!…I don’t have AC so I’m not using the oven today!!

      Sheryl, Just make it with no crust, thats what I do when I don’t want to use the oven or just feel like being super quick 🙂

    I tried this at home yesterday and followed the recipe to the point- they were delicious, but did not stiffened like how i see it in here. I had to leave mine in the cup cake foil itself and eat it with a spoon, more like creamy n bit soupy- how can I fix this? Thanks in advance

    Can I substitute Swerve for the Sweet Blend and are you using mini muffin tins or regular muffin tins.

      Hey Pam! You can substitute but I’m not sure how it would taste so taste and adjust as needed. You can use either tins.
