Mango Avocado Salad

This yummy salad is going to explode with flavors in your mouth while keeping it light and fresh with the summer heat!

Black Bean, Avocado, and Mango Salad!

1 can (15 oz) of whole organic black beans
1 whole ripe organic avocado, halved, pitted, peeled and cut  into 1/2-inch cubes
1 whole mango, cut into 1/2-inch cubes
3 cups of spring mix
1/2 lime to sprinkle over avocado after

Method:

Be very careful when cutting mangos- they can be slippery because of the juices that are released as you slice the fruit.

Stand the mango on one of its sides on a cutting board. Using a sharp knife, cut slightly off center, slicing off all the flesh from one side of the pit in a single piece, then repeat on the other side of the pit. Hold 1 section, flesh side up, in your hand. With the tip of the knife, score the flesh lengthwise and then crosswise, forming 1/2-inch cubes and taking care not to cut through the peel. Press against the center of the peel to force the cubes upward, then run the knife along the base of the cubes to free them, allowing them to drop into your bowl. Do this to the other side of the mango as well.

Then cut the avocado in 1/2-inch cubes add to the bowl along with the juice of 1/2 of a lime.

Toss the mango, avocado, and lime juice together.

Then open the the can of black beans, drain and add to the mango, avocado, and lime juice.

Add your spring mix greens.

Toss well.

Then start on the dressing.

 

Spring Salad Dressing

One thing I do not often spend money on is salad dressings.  Why?  because I already have the main ingredients in my pantry as staple.  We make our own salad dressings.  Easy to do, very delicious, and saving you time and money!

Ingredients:

4 tablespoons good quality extra virgin olive oil
1/2 tablespoon honey
the juice of one small lime (or more depending on taste)
1 clove of garlic, peeled
1 tablespoons fresh cilantro
1/4 teaspoon sea salt
dash of freshly ground black pepper

Method:
Place all ingredients into a blender and blend until smooth. Taste and adjust salt and seasonings if necessary.

Pour over your the Black Bean,  Avocado, Mango Mix and Toss well to incorporate the dressing.

 

*Note: This salad could be a crossover on the Trim Healthy Mama plan by just adding on plan sweetener instead of honey in the dressing!
