Luscious Lemon Coconut Mousse

“Luscious Lemon Coconut Mousse”

Longing for a little lemon zing? Well this luscious lemon coconut mousse is just the trick to satisfy those sweet tingling taste buds. Perfect for that craving anytime!

Luscious Lemon Coconut Mousse

Ingredients:

  • Whole lemon
  • 2 cups of Water
  • THM Mineral salt (Canadians get it here)
  • 1/4 cup Light canned coconut milk
  • 1 tsp. Extra virgin coconut oil (Canadians get it here)
  • 1 tsp. THM Gluccie (Canadians get it here)
  • 4 tsp. THM Gentle Sweet (Canadians get it here)
  • 1 drop of Young Living Lemon Essential Oil

 

Directions:

1. Peel the yellow off one lemon, keeping as much of the white as you can so it retains all the healthy flavonoids. Roughly chop the lemon, get rid of seeds and put in blender.

2. Add ¼ cup of light canned coconut milk.

3. Add 2 cups of water and a drop of lemon essential oil.

4. Add a generous pinch of sea salt.

5. Add 1 tsp. extra virgin coconut oil.

6. Add 4 rounded tsp. gentle sweet.

7. Start blending and slowly add 1 tsp. glucomannan powder. Blend for a couple of minutes. Stop blender. Let it rest for a minute or two then blend again until thickened to a pudding/mousse consistency (add another tsp. if needed)…

    Hey Sharisa…I haven’t used a food processor to make it…but you should try it….You just might have to leave it running a little longer for it to thicken? 🙂

    Do you include the peel? Mine turned out white not yellow and very little lemon flavor. Added lemon extract. Might try 2 or 3 lemons.

      AS per the directions they don’t include the peel but if it wasn’t enough lemon flavor for you feel free to add it in if you can stand the bitterness of it!

    I’ve just started THM (yesterday) and I’m still getting the hang of it. Is this mousse an S or an FP? Thanks.

      Hi Angela! This recipe is a light S. That just means that it doesn’t have much fat but has more than a FP would. Congrats on starting THM! And I’ll edit the post to include that it’s an S for anyone else.

    I love the Luscious Lemon Mousse!! I made it before and then couldn’t find my recipe. Searched the internet for lemon and coconut recipes and it came up on your site. It’s one of the few desserts I can eat. I just add a little extra Young Living Lemon Oil to get the desired lemony tang that I like. Thanks so much.
