School is back in session and if you’re trying to get back into the routine of homework, bath time, and bedtime…then dinner time needs to be simple! Look no further than these great “Loaded Sweet Potatoes” for a meal that almost cooks itself! Bake the sweet potatoes in the oven or throw them in the slow cooker in the morning for a quick dinner-time meal.

Loaded Sweet Potato


  • one medium sweet potato
  • lean ground or chunks of turkey
  • sugar-free salsa
  • fat-free sour cream
  • light cheese
  • salt
  • pepper
  • chives, cilantro, or other herbs to taste


  1. Bake the sweet potato.
  2. Brown the turkey.
  3. Load the turkey, salsa (2-3TB), sour cream (1-2TB), a sprinkle of cheese, herbs, salt, and pepper onto the sweet potato.
  4. Enjoy!
