Lip-Smacking Coffee Cake

Looking for a lip-smacking satisfying eat anytime treat? That’s exactly what we have for you this week! One of those slap your momma (well… not too hard) kinda recipes that will literally blow your mind how good it is and yet you can still have it while staying on the THM plan and keep those pounds melting off!

- 3 cups almond flour
- 1/4 cup THM Pristine Whey Protein Powder (Canadians get it here)
- 2 tsps baking powder
- 1 tsp baking soda
- 1/4 tsp THM Mineral salt (Canadians get it here)
- 1 cup sour cream
- 1/4 cup THM Gentle Sweet (Canadians get it here)
- 2 eggs
- 1/2 tsp vanilla extract
- 3 tbsp THM Gentle Sweet
- 2 tsp cinnamon
- Optional (Only if Your Allergic to Chocolate)-2 ozs Lily’s dark chocolate
- Heat oven to 325f, line an 8×8 pan with parchment paper.
- Filling- whisk together the cinnamon and sweetener.
- Whisk together the almond flour, protein powder, baking powder, baking soda and salt.
- Whisk the sour cream, sweeteners, vanilla extract and eggs together.
- Combine the two mixtures.
- Spread half of the batter into the pan, then sprinkle half the cinnamon/sweetener mixture and half the chocolate. lightly press on the chocolate to anchor it into the dough.
- Dollop the rest of the batter and spread evenly. sprinkle the rest of the cinnamon/sweetener mixture and chocolate on top. again, lightly press on the chocolate to anchor it into the dough.
- Bake for 35 minutes or until the top is golden brown.
*Note-If following the Trim Healthy Mama plan this is an ‘S’ style meal.
