Lemony Cookies

 

Ingredients:

  • 1/2 cup butter
  • 1TB Refined Coconut Oil
  • 1 Egg
  • 1/4 cup of THM Gentle Sweet
  • 1-2 drops of Young Living Lemon Vitality Essential Oil
  • Zest of 1 lemon
  • 1 tsp. Vanilla Extract
  • Pinch of THM Himalayan Sea Salt
  • 1 tsp. Baking Powder (Aluminum Free)
  • 1/3 cup of Coconut Flour
  • 3/4 cup of Almond Flour
  • 4TB THM Pristine Whey Protein Powder

Directions:

  1. Soften the butter and coconut oil and mix together in a large bowl with the egg.
  2. Add all ingredients except for the coconut and almond flours.
  3. Add each flour one at a time and mix until fully combined.
  4. Heat oven to 350. While oven is heating, spoon small spoonfuls of cookie dough onto a greased cookie sheet.
  5. Bake at 350 for 8-10 minutes.
  6. Let sit for a good 20-30 minutes before moving them.

Makes about 24 cookies

    What if I don’t use oils? Can lemon juice replace that? And if so, what would be the amount?

      I’ve only used it with oils so honestly your guess would be as good as mine! I would start with a TB and taste and adjust as needed.

      Since this is an S cookie there is no technical serving size, however, I would stick to 2-3 so as not to overdo it.

    I just made these yummy cookies and I used 2 TBS of lemon juice and 2 packets of the Just Lemon. I zested the lemon too. (as called for in the recipe). As they were baking the aroma of lemon really filled my whole house and they taste divine! I am so glad I found this recipe!
