Crustless Bacon, Mushroom & Cheddar Quiché

You had me at bacon! This recipe is delicious and so easy to make! It’s a crowd pleaser and a winner any night of the week. Whip this up and enjoy an easy dinner!

Crustless Bacon, Mushroom & Cheddar Quiché
Ingredients:
- 6 Slices of Bacon (cooked & chopped)
- 1/2 onion diced
- 1 package of mushrooms (chopped)
- 2 tsp. of Butter
- 1 cup of Baby Spinach (chopped)
- 6 eggs
- 6 oz. Shredded Cheddar Cheese
- 1/2 cup of Heavy Cream
- Himalayan Salt (to taste)
- Pepper (to taste)
Directions:
- Heat butter in a skillet over medium heat.
- Add onion and mushrooms and cook for 5 minutes, stirring occasionally.
- In a medium-sized bowl, beat eggs, cream, salt, and pepper together.
- Stir in the onion and mushroom mixture, spinach, bacon, and cheese.
- Butter a glass pie plate or quiche dish and pour the egg mixture in, evenly dispersing the mixture.
- Bake at 350 degrees F for 25-30 minutes, or until a knife inserted in the center comes out clean.
- Let rest 5 minutes before cutting and serving.
