Creamy “Baked Potato Soup”

Looking for a low-carb alternative to the traditional potato soup, then look no further than this scrumptious Creamy “Baked Potato Soup”, without the potatoes! Perfect for those chilly nights with the fireplace roaring and everyone wanting something warm and yummy to fill their tummies!

Keto Menu Plans

Ingredients:

1.5 cups Chopped Raw Cauliflower
1 cup Low-Sodium Chicken Broth
1 Laughing Cow Cheese Wedge
Pepper to taste
Garlic Powder to taste
1/2 cup or 2 oz of Low-Fat Shredded Cheddar Cheese
2.5 oz of Cooked Turkey Bacon
1 qtr. cup Water

Directions:

  1. Add the chopped cauliflower and chicken broth to a pot and bring to a boil.
  2. Reduce the heat to a simmer, cover, and cook for 15 minutes.
  3. Remove from heat and place in a blender or Nutra bullet, puree.
  4. Pour back into pot on low heat.
  5. Add Laughing Cow Wedge, 1.5 oz of shredded cheese, 2oz of chopped Turkey Bacon, 1 qtr. cup of water, pepper, and garlic powder.
  6. Remove from heat.
  7. Top with the leftover shredded cheese and chopped bacon.
