“Chocolate Strawberry Shortcake”

This Mother’s Day, we have cooked up a treat…a Trim Healthy Mama treat that is! Check out this scrumptious Chocolate Strawberry Shortcake to devour with absolutely no guilt on your special day of celebration! (you can even drizzle some extra skinny chocolate on top if your little heart desires!)

Chocolate Strawberry Shortcake

Ingredients:

  • 1 ½ cups almond flour
  • ¼ cup coconut flour
  • 2 tablespoons cocoa powder (Canadians get it here)
  • ¼ teaspoon THM Mineral salt (Canadians get it here)
  • ½ teaspoon baking soda
  • 3 eggs
  • THM Sweetener to taste (Canadians get it here)

Filling & Topping:

  • 2 cups heavy cream
  • THM sweetener to taste
  • 1 tablespoon vanilla extract
  • 1 pound fresh strawberries, hulled and sliced

 

Directions:

  1. In a large bowl, combine almond flour, coconut flour, cocoa, salt, baking soda, & sweetener
  2. Add in eggs
  3. Scoop batter into lined cupcake cups
  4. Bake at 350° for 12-15 minutes
  5. Cool cupcakes completely and set aside
  6. In a large bowl, whip cream, THM sweetener and vanilla
  7. Top each one with a dollop of whipped cream and strawberries

      Approx. 6 Muffins depending on the size of your muffin tins and how you fill them!:)
      not sure on the carbs??

      You can plug any recipe into NutritionData.com (can even create your own “food” if they don’t have it by adding items from the label) and it will give you all the info just like anything you buy at the store. 🙂

      Yes, Sheryl…that is what we counted it as… with the eggs and heavy cream 🙂

    I just mixed up the ingredients for the cupcakes, it is very dry…. like just one big clump, does some of the heavy cream have to go in the batter for the cupcakes? Or is the batter supposed to be very dry?

      Hey Diane…the original version called for 1/2 cup of honey, but on THM we tend to stay away from honey as it can spike blood sugar while trying to loose weight.
      Adding a bit of water or a splash of the heavy cream should work to moisten the batter 🙂

    Your ingredient list mentions filling, but I don’t see any filling listed in the recipe. Was that a mistake, or do you cut open the cupcake and put filling in it?

      Hey Julieanne,

      The Filling/Topping can be used either on top or yes…by cutting the cupcake open and placing a dollop inside with the strawberries on top! 🙂
