“Chocolate Strawberry Shortcake”

This Mother’s Day, we have cooked up a treat…a Trim Healthy Mama treat that is! Check out this scrumptious Chocolate Strawberry Shortcake to devour with absolutely no guilt on your special day of celebration! (you can even drizzle some extra skinny chocolate on top if your little heart desires!)

Chocolate Strawberry Shortcake
Ingredients:
- 1 ½ cups almond flour
- ¼ cup coconut flour
- 2 tablespoons cocoa powder (Canadians get it here)
- ¼ teaspoon THM Mineral salt
(Canadians get it here)
- ½ teaspoon baking soda
- 3 eggs
- THM Sweetener to taste (Canadians get it here)
Filling & Topping:
- 2 cups heavy cream
- THM sweetener to taste
- 1 tablespoon vanilla extract
- 1 pound fresh strawberries, hulled and sliced
Directions:
- In a large bowl, combine almond flour, coconut flour, cocoa, salt, baking soda, & sweetener
- Add in eggs
- Scoop batter into lined cupcake cups
- Bake at 350° for 12-15 minutes
- Cool cupcakes completely and set aside
- In a large bowl, whip cream, THM sweetener and vanilla
- Top each one with a dollop of whipped cream and strawberries
