Chocolate Peanut Butter Cup Pudding

Ingredients:

Directions:

1 Put 2 cups of unsweetened almond milk in blender (we use Silk brand).
2 Add vanilla to taste, a couple of generous pinches of sea salt.
3 Add 2 heaped Tbs. Peanut Flour or 2 heaped TB of cacao powder and 3-4 tsp. of THM gentle sweet.
4 Add 1/4 scoop whey protein powder.
5 Start blender then add 2 tsp. glucomannan powder while blender is running.
6 Blend to thicken pudding which will take a couple of minutes – turn blender off.
7 Taste for flavors, adjust as needed then add more water (about another 1/2 cup) and blend further until thickened more.

*NOTE: add more almond milk if you need to smooth out the texture.

Enjoy!

So how many servings do you need to get out of this to keep it in FP?

  2. laundrymoms says:

    Hey JoAnn…

I usually make a batch of each flavor and it makes about 4 of those little glass containers pictured, i will double both …if I want to have a couple left over for breakfast or a snack the next day!

    Does that answer your question?

I just made this into banana pudding. I increased the whey protein powder and left out the coco & peanut flour. I added banana extract and about a 1 1/2 inch piece of banana. Very yummy! Thanks for posting.

Is there a reason why you don’t use THM stevia?

You say to add more water at the end but do not indicate to add any water anywhere else in it? Am I missing something?

Hmmm I’m actually not sure! This recipe was from a long time ago. Maybe try it without the water and if it needs to have more liquid added then try to add a little at a time.

      Hope that helps!
