Chicken Tortilla Soup

The cooler weather is here and with it comes soup season! Yummy! Here is an awesome keto chicken tortilla soup recipe that is sure to make your mouth water. This is a single-serve for those days you just need a cuppa.

- 3 oz. shredded Chicken
- 2TB Cheese
- 1 TB Olive Oil
- 1tsp. Smoked Paprika
- 1 cup of Chicken Broth
- 1 & 1/2 TB Onion
- 1 & 1/2 TB Carrot
- 1 & 1/2 TB Celery
- 1 TB Tomato Paste
- 3/4 medium Avocado
- 1 TB Sour Cream
- Scallion (to garnish)
- Put the olive oil, carrot, celery, and onion in a saucepan. Heat to medium-low and let cook for 10 minutes.
- Add the tomato paste and paprika and let cook for another 5 minutes.
- Add the broth and the chicken and let cook for an additional 10 minutes.
- Garnish with scallions and serve with avocado and sour cream.
