Keto Menu Plans
Ingredients:
- 1/3 cup THM Sweet Blend (or your favorite healthy sweetner like stevia, erythritol, or xylitol)
- 1 cup butter or coconut oil
- 1 tsp vanilla extract
- 1 egg
- 1 cup almond meal/flour
- 1 cup oat fiber
- 1 tsp baking soda
- 1 tsp salt
- 1 1/2 cups dark chocolate chips (85% will not spike blood sugar or use Sugar-Free Chocolate Chips)
Directions:
- Preheat oven to 375ºF.
- Mix NuStevia, butter, vanilla, and egg in a large bowl.
- Stir in almond meal, oat fiber, baking soda, and salt.
- Stir in dark chocolate chips.
- Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet.
- Bake 8 to 10 minutes or until light brown.
- Cool slightly; remove from cookie sheet.
- Cool on wire rack.
- Enjoy!
